Beschreibung: Influence of distillation parameters on the fractionation behavior of aroma compounds in distillation columns in the production of fruit spirits

The quality of fruit spirits is defined by its aroma. It is also decisive for purchase decisions of customers. However, it is still unclear how the fractionation behavior of fruit-typical aroma compounds can be controlled during the distillation process. This will be investigated in the project on a novel digitized fruit brandy still (Distillery 4.0).

• Masters degree in natural science or engineering
• Application-oriented technical know-how
• Analytical knowledge
• Very good English skills (written and spoken)

The project is accompanied by a group of members of the industry and offers the opportunity to build up a good network at an early stage of the doctorate. The duration of the project is three years, the payment is according to German public service pay scale TV-L13 (50%).
