Beschreibung: Improvement of the quality of fruit spirits from "Streuobst"

"Streuobst" is a German term for the traditional type of extensive grassland-orchards that are shaping the landscape in the South-West of Germany. This species-rich, semi-natural habitat is nowadays endangered. The production of high-quality fruit-spirits from "Streuobst" may offer an incentive for small-scale farmers to continue cultivating their land and preserve this unique type of landscape.

In this project, funded by the Ministry of Rural Affairs and Consumer Protection of Baden-Württemberg, the optimal fermentation and distillation conditions for the production of high-quality spirits from "Streuobst" will be established, including new strategies for the optimization of the fractionation of aroma-active compounds in distillation columns.
